Method
 

Preparation
  1. Slice the chicken breast into even, thin strips for quick and uniform cooking.
  2. Slice the bell peppers and red onion into similar-sized pieces.
  3. In a small bowl, whisk together the chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
  4. Toss the chicken strips in half of the spice mixture and a drizzle of olive oil until well-coated.
Cooking
  1. Heat a large skillet or cast-iron pan over medium-high heat with a tablespoon of olive oil.
  2. Once the pan is shimmering, add the chicken in a single layer and sear for 5-7 minutes until cooked through and golden-brown.
  3. Remove chicken from the pan and set aside.
  4. In the same pan, add remaining oil, peppers, and onions.
  5. Sprinkle with the rest of the spice mix and sauté for 5 minutes until tender-crisp with charred edges.
  6. Squeeze fresh lime juice over the vegetables to deglaze the pan.
Plating
  1. Divide the cooked rice among four bowls.
  2. Place a portion of sautéed peppers and onions on one side, followed by a heap of seasoned chicken.
  3. Add your desired toppings like black beans, avocado slices, sour cream, and cilantro.
  4. Serve immediately with extra lime wedges.
