Ingredients
  

For the Chicken
  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon taco seasoning (or a mix of cumin, chili powder, and garlic powder)
  • 1 none lime, juiced
For the Bowl
  • 3 cups cooked white or brown rice (cilantro lime rice is best)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn, thawed or charred
  • 1 cup cherry tomatoes, halved
  • 1 large avocado, sliced or mashed
  • 1/4 cup red onion, finely diced
For Garnish
  • none Fresh cilantro and sour cream
  • none Your favorite salsa or hot sauce

Method
 

Preparation
  1. Toss your diced chicken breast in a medium bowl with the olive oil, taco seasoning, and half of the lime juice. Let it sit for at least 10 minutes.
  2. Chop your tomatoes, onions, and cilantro, and start cooking your rice if not done yet.
Cooking
  1. Heat a large skillet over medium-high heat, and add the chicken in a single layer. Cook for 6 to 8 minutes until golden brown.
  2. In the last two minutes, add black beans and corn to warm and soak up the pan juices.
Assembly
  1. Divide the cooked rice among four bowls. Top each bowl with seasoned chicken, black beans, and corn.
  2. Add cherry tomatoes, red onion, and avocado slices. Drizzle with remaining lime juice and add sour cream and salsa.
  3. Finish with fresh cilantro and serve immediately.

Notes

For best texture, sear chicken on high heat. Char corn for added flavor. Store avocado and sour cream separately when meal prepping.
