Preparation
- Toss your diced chicken breast in a medium bowl with the olive oil, taco seasoning, and half of the lime juice. Let it sit for at least 10 minutes.
- Chop your tomatoes, onions, and cilantro, and start cooking your rice if not done yet.
Cooking
- Heat a large skillet over medium-high heat, and add the chicken in a single layer. Cook for 6 to 8 minutes until golden brown.
- In the last two minutes, add black beans and corn to warm and soak up the pan juices.
Assembly
- Divide the cooked rice among four bowls. Top each bowl with seasoned chicken, black beans, and corn.
- Add cherry tomatoes, red onion, and avocado slices. Drizzle with remaining lime juice and add sour cream and salsa.
- Finish with fresh cilantro and serve immediately.
Notes
For best texture, sear chicken on high heat. Char corn for added flavor. Store avocado and sour cream separately when meal prepping.
