  • 1 lb chicken breast, cut into bite-sized cubes Use chicken thighs for juicier flavor.
  • 2 cups cooked white or brown rice Basmati or Jasmine rice is recommended.
  • 1 cup canned black beans, rinsed and drained
  • 1 cup sweet corn (fresh, frozen, or canned) Frozen corn can be used.
  • 1 cup cherry tomatoes, halved
  • 1 large avocado, sliced Squeeze lime juice on slices to prevent browning.
  • 1/4 cup red onion, finely diced
  • 2 tablespoons olive oil
Spices
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • to taste Salt and black pepper
For the Sauce
  • 1/2 cup Greek yogurt or sour cream Can substitute with dairy-free yogurt.
  • 1 tablespoon fresh lime juice
Garnish
  • Fresh cilantro for garnish Optional, for extra flavor.
  • Lime wedges for serving

Method
 

Preparation
  1. Place the chicken cubes in a medium bowl. Add the olive oil, cumin, smoked paprika, garlic powder, salt, and pepper. Toss well until every piece of chicken is evenly coated in the spice mixture.
Cooking
  1. Heat a large skillet over medium-high heat. Once hot, add the chicken in a single layer. Cook for about 7 to 9 minutes, turning occasionally, until the chicken is cooked through and has a nice brown color on the outside.
  2. While the chicken is cooking, whisk together the Greek yogurt (or sour cream) and lime juice in a small bowl to create the sauce. Set this aside.
Assembly
  1. Prepare four serving bowls. Start by adding half a cup of cooked rice to each bowl.
  2. Divide the cooked chicken evenly among the bowls, placing it on top of the rice.
  3. Add the black beans, corn, cherry tomatoes, and red onion to each bowl in separate sections for a beautiful presentation.
  4. Top each bowl with slices of fresh avocado and a sprinkle of chopped cilantro.
  5. Drizzle the lime sauce over the top and serve with an extra lime wedge on the side.

Notes

For meal prep, store components separately to maintain freshness. Don't slice the avocado until ready to eat.
