  • 2 cups cooked chicken, shredded
  • 1 ripe avocado, diced
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 cup lettuce, shredded
  • 1 medium tomato, diced

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, diced avocado, ranch dressing, and shredded cheese. Mix until well combined.
  2. Warm the tortillas on a skillet or in the microwave until they are soft and pliable.
  3. Lay a tortilla flat and add a portion of the chicken and avocado mixture. Top with shredded lettuce and diced tomatoes.
  4. Season with salt and pepper to taste.
  5. Roll the tortilla tightly, folding in the sides as you go to keep the filling inside.
  6. Repeat with the remaining tortillas and filling until all are prepared.
  7. Serve immediately or wrap in foil to keep warm if you’re not ready to enjoy them right away.

Notes

Serve with a side of salsa, guacamole, or sour cream for dipping. These burritos can also be cut into smaller pieces and served as an appetizer.
