Ingredients
  

For the filling
  • 2 cups cooked chicken, shredded Can use leftover roast chicken or rotisserie chicken.
  • 1 ripe avocado mashed Ensure the avocado is ripe for best flavor.
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons mayonnaise (optional) Can be omitted for a healthier version.
  • Salt and pepper to taste
For the sandwich
  • 4 slices bread (your choice) Sourdough, whole wheat, or a crusty baguette recommended.
  • Butter for grilling For grilling the sandwiches.

Method
 

Preparation
  1. In a bowl, combine the shredded chicken and mashed avocado. Add mayonnaise if desired, and season with salt and pepper.
  2. Spread the chicken and avocado mixture evenly onto two slices of bread.
  3. Top with shredded cheese and the remaining slices of bread.
Grilling
  1. Heat a skillet over medium heat and add a little butter.
  2. Place the sandwiches in the skillet and grill until golden brown on both sides, about 3-4 minutes per side.
  3. Remove from skillet, slice, and enjoy!

Notes

Serve hot with a side of crispy sweet potato fries or a light green salad. For dipping, consider serving with salsa or guacamole.
