Preparation
- In a bowl, combine the shredded chicken and mashed avocado. Add mayonnaise if desired, and season with salt and pepper.
- Spread the chicken and avocado mixture evenly onto two slices of bread.
- Top with shredded cheese and the remaining slices of bread.
Grilling
- Heat a skillet over medium heat and add a little butter.
- Place the sandwiches in the skillet and grill until golden brown on both sides, about 3-4 minutes per side.
- Remove from skillet, slice, and enjoy!
Notes
Serve hot with a side of crispy sweet potato fries or a light green salad. For dipping, consider serving with salsa or guacamole.
