Preparation
  1. Preheat your oven to 400°F (200°C). On a baking sheet, toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them out in a single layer and roast for about 20-25 minutes, or until tender and slightly caramelized.
  2. While the sweet potatoes are roasting, season the cubed chicken with garlic powder, onion powder, salt, and pepper. Heat a little olive oil in a skillet over medium-high heat, add the chicken, and cook for about 6-8 minutes or until golden brown and cooked through.
Sauce Preparation
  1. In a mixing bowl, combine Greek yogurt (or mayonnaise), lime juice, sriracha, cumin, paprika, and cayenne pepper. Mix until smooth, adjusting the sriracha and cayenne pepper to your heat preference.
Assembly
  1. To assemble the bowls, divide the cooked rice among bowls, top with roasted sweet potatoes, sautéed chicken, and green vegetables. Drizzle the yogurt sauce over the top and garnish with fresh cilantro or parsley.

Notes
