Ingredients
  

Main Ingredients
  • 4 pieces Chicken breasts Boneless and skinless for best results.
  • 2 pieces Sweet potatoes Peeled and cubed.
  • 2 tablespoons Olive oil For roasting sweet potatoes and cooking chicken.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Black pepper Adjust to taste.
Veggies
  • 1 cup Bell peppers Sliced.
  • 1 cup Broccoli Cut into florets.
  • 2 cloves Garlic Minced.
Optional Toppings
  • 1 piece Avocado Sliced, for added creaminess.
  • 1/4 cup Nuts Chopped, for crunch.
  • 1/4 cup Salsa To add flavor.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, or until tender.
Cooking
  1. While the sweet potatoes are roasting, season the chicken breasts with salt, pepper, and minced garlic. Cook in a skillet over medium heat for 6-7 minutes per side, or until cooked through.
  2. Steam or sauté the bell peppers and broccoli until crisp-tender.
Assembly
  1. Assemble the bowls by placing the sweet potatoes, chicken, and veggies in a bowl. Add your favorite toppings and serve.

Notes

These bowls can be stored separately for meal prep or kept in airtight containers in the fridge for up to 4 days. Toppings can be customized for variety.
