Preparation
- Preheat the oven to 425°F (220°C).
- Peel and chop the sweet potatoes into bite-sized pieces.
- In a bowl, toss the sweet potatoes with olive oil, salt, pepper, and garlic powder. Spread them on a baking sheet.
- Season chicken breast with salt, pepper, and olive oil. Add to the baking sheet.
Cooking
- Roast in the oven for 20-25 minutes or until the chicken is cooked through and sweet potatoes are tender.
- While baking, prepare your choice of vibrant veggies.
Assembly
- Once everything is cooked, assemble your bowls with chicken, sweet potatoes, veggies, and any desired toppings. Serve and enjoy!

Store leftovers in airtight containers in the fridge for up to 3-4 days. You can also freeze components separately.
