  • 2 pieces Chicken breast Skinless and boneless
  • 2 medium Sweet potatoes Peeled and chopped
  • 1 medium Red onion Chopped
  • 1 medium Bell pepper Chopped
  • 2 tablespoons Olive oil For roasting
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Pepper Adjust to taste
  • 1 teaspoon Garlic powder Optional seasoning
  • to taste Favorite toppings (e.g., avocado, cheese, nuts) Choose according to preference

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Peel and chop the sweet potatoes into bite-sized pieces.
  3. In a bowl, toss the sweet potatoes with olive oil, salt, pepper, and garlic powder. Spread them on a baking sheet.
  4. Season chicken breast with salt, pepper, and olive oil. Add to the baking sheet.
Cooking
  1. Roast in the oven for 20-25 minutes or until the chicken is cooked through and sweet potatoes are tender.
  2. While baking, prepare your choice of vibrant veggies.
Assembly
  1. Once everything is cooked, assemble your bowls with chicken, sweet potatoes, veggies, and any desired toppings. Serve and enjoy!

Notes

Store leftovers in airtight containers in the fridge for up to 3-4 days. You can also freeze components separately.
