Ingredients
  

For the cookie dough
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 2 tsp ground cinnamon plus extra for rolling
  • 1 cup unsalted butter, softened Make sure it's softened, not melted.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp pure vanilla extract
For rolling
  • 2 tbsp granulated sugar For rolling cookies
  • 1 tbsp ground cinnamon For rolling cookies

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, cream of tartar, and ground cinnamon until well combined.
  3. In a separate bowl, beat the softened butter with granulated sugar and brown sugar until fluffy.
  4. Add the eggs one at a time and mix in the vanilla extract until fully incorporated.
  5. Gradually combine the wet and dry mixtures while stirring gently until just mixed.
Baking
  1. Scoop dough balls (about 1-2 inches wide), roll them in a cinnamon-sugar mixture, and place them on a parchment-lined baking sheet.
  2. Bake for 8-10 minutes until the edges are golden but the centers are slightly underbaked.
  3. Cool before transferring to wire racks.

Notes

These cookies are perfect on their own or served alongside a glass of milk or a cup of coffee. Store in an airtight container at room temperature for about a week. For longer storage, freeze in a freezer-safe bag for up to three months.
