  • 1 cup unsalted butter, softened Use room temperature butter for best results.
  • 1 cup brown sugar Packed brown sugar works best.
  • 1/2 cup granulated sugar
  • 1/2 cup honey
  • 2 large eggs Large eggs are standard in baking.
  • 3 cups all-purpose flour Use the spoon-and-level method for best results.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Flaky sea salt for sprinkling Use a small pinch on top before baking.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the honey and eggs until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Drop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, spacing them a few inches apart.
Baking
  1. Sprinkle a small pinch of flaky sea salt on top of each cookie before baking.
  2. Bake for 10-12 minutes until the edges are golden but the centers are still soft.
  3. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to a week. Can freeze for up to three months.
