Preparation
- Preheat your oven to 400°F (200°C).
- Cut the baby potatoes in half and place them in a mixing bowl.
- Drizzle the olive oil and ranch dressing over the potatoes, then sprinkle garlic powder, onion powder, salt, and pepper. Toss to coat.
Roasting
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until golden and tender.
- Remove from the oven and immediately sprinkle with shredded cheddar cheese.
- Return to the oven for 5 minutes to melt the cheese.
Serving
- Serve warm, garnished with fresh parsley.
