  • 2 pounds baby potatoes Cut in half
  • 1/4 cup ranch dressing
  • 1 cup shredded cheddar cheese For topping
  • 2 tablespoons olive oil
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper To taste
  • Chopped fresh parsley For garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the baby potatoes in half and place them in a mixing bowl.
  3. Drizzle the olive oil and ranch dressing over the potatoes, then sprinkle garlic powder, onion powder, salt, and pepper. Toss to coat.
Roasting
  1. Spread the potatoes on a baking sheet in a single layer.
  2. Roast in the preheated oven for 25-30 minutes, or until golden and tender.
  3. Remove from the oven and immediately sprinkle with shredded cheddar cheese.
  4. Return to the oven for 5 minutes to melt the cheese.
Serving
  1. Serve warm, garnished with fresh parsley.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven for best results. Modify the cheese for variations.
