  • 2 pounds baby potatoes Cut in half
  • 1 cup shredded cheddar cheese For topping
  • 1 packet ranch seasoning mix
  • 2 tablespoons olive oil For tossing the potatoes
  • Salt and pepper to taste
  • Chopped chives or green onion for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half.
  3. In a large bowl, toss the potatoes with olive oil, ranch seasoning, salt, and pepper until evenly coated.
Cooking
  1. Spread the potatoes out on a baking sheet in a single layer.
  2. Bake for 25-30 minutes or until golden brown and tender.
  3. In the last 5 minutes of baking, sprinkle the shredded cheddar cheese over the potatoes and return to the oven until the cheese melts.
  4. Remove from the oven, garnish with chives or green onion, and serve warm.

Notes

Store leftover potatoes in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results. For extra crispiness, consider parboiling the potatoes for 5 minutes before tossing them with olive oil and seasoning.
