Main Ingredients
  • 1 pound ground beef Lean ground beef recommended
  • 1 cup uncooked rice White rice works best
  • 1 can cream of mushroom soup
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese Feel free to mix with other cheeses
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup frozen mixed vegetables (optional) Substitute for fresh if desired

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, brown the ground beef and onion over medium heat until the meat is no longer pink. Drain any excess fat.
  3. In a large mixing bowl, combine the cooked beef and onion, uncooked rice, cream of mushroom soup, beef broth, garlic powder, salt, and pepper. If you're using mixed vegetables, add them in now.
  4. Pour the mixture into a greased 9x13 inch baking dish.
Baking
  1. Cover with aluminum foil and bake for 45 minutes.
  2. Remove the foil, sprinkle the shredded cheese on top, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  3. Let it sit for a few minutes before serving.

Notes

This casserole is great for meal prep. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 3 months.
