  • 1.5 lbs chicken breast, cut into small cubes
  • 4 large flour tortillas
  • 4 cloves garlic, minced
  • 2 cups shredded mozzarella or cheddar cheese (or a mix)
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/4 cup garlic aioli or mayonnaise
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Method
 

Cooking Chicken
  1. Place a large skillet over medium-high heat and add the olive oil.
  2. Season the chicken cubes with salt, pepper, paprika, and onion powder. Toss well to coat every piece.
  3. Add the chicken to the hot skillet. Cook for about 5 to 7 minutes until the chicken is browned and cooked through.
  4. Turn the heat down to medium and add the minced garlic. Stir constantly for 1 minute so the garlic becomes fragrant but does not burn.
  5. Remove the chicken from the heat and set it aside in a bowl.
Assembling Wraps
  1. Lay the tortillas flat on a clean surface. Spread a tablespoon of garlic aioli or mayo in the center of each tortilla.
  2. Sprinkle a quarter of the cheese onto each tortilla, then top with a quarter of the cooked garlic chicken.
  3. Fold the sides of the tortilla inward and roll it up tightly to form a wrap.
Toasting Wraps
  1. Wipe the skillet clean and return it to medium heat. Place the wraps seam-side down in the pan.
  2. Toast for 1-2 minutes per side until the tortilla is golden brown and the cheese inside has completely melted. Serve warm.

Notes

These wraps pair well with a fresh salad, sweet potato fries, or tomato soup. Store leftovers tightly wrapped in the fridge for up to 3 days. Reheat in a pan for best results. Use plant-based cheese for a dairy-free option.
