  • 2 cups cooked shredded chicken You can use rotisserie chicken for a time-saver.
  • 2 cups fresh broccoli florets Frozen broccoli can also be used; thaw and drain it first.
  • 2 cups shredded cheese (cheddar or a mix) Feel free to experiment with mozzarella or pepper jack.
  • 1 cup cream of chicken soup Can be substituted with cream of mushroom soup.
  • 1 cup cooked rice This ingredient is optional.
  • 1/2 cup milk Use any milk alternatives for a dairy-free version.
  • to taste Salt and pepper
  • 1/2 teaspoon garlic powder For added flavor.
  • 1/2 teaspoon onion powder For added flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, broccoli, cheese, cream of chicken soup, milk, rice (if using), garlic powder, onion powder, and salt and pepper.
  3. Mix until well combined.
  4. Transfer the mixture to a greased casserole dish and spread it evenly.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until bubbly and the cheese is melted.
  2. Remove from the oven, let cool slightly, and serve warm.

Notes

This casserole can be served as a standalone meal or with a side salad. Store leftovers in an airtight container for up to 3-4 days, or freeze for up to 2 months.
