Ingredients
  

For the carrot cake
  • 2 cups grated carrots Finely grated for better texture
  • 1 cup all-purpose flour May substitute with gluten-free flour if needed
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 pieces eggs Large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
For the cheesecake layer
  • 8 oz cream cheese (softened) Ensure cream cheese is softened completely
  • 1/2 cup sugar For cheesecake layer
  • 1 piece egg For cheesecake layer
  • 1 teaspoon vanilla extract For cheesecake layer

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, mix grated carrots, all-purpose flour, sugar, brown sugar, vegetable oil, eggs, vanilla extract, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, beat softened cream cheese, sugar, egg, and vanilla extract until smooth.
Assembly
  1. Pour half of the carrot cake batter into the prepared baking dish, then spread the cheesecake mixture on top.
  2. Pour the remaining carrot cake batter over the cheesecake layer.
  3. Use a knife to swirl the layers together for a marble effect.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow to cool before slicing into bars and serving.

Notes

These bars can be dusted with powdered sugar or topped with whipped cream for an added treat. They are best served chilled.
