Ingredients

Dry Ingredients
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
Wet Ingredients
  • 4 large eggs
  • 1 cup vegetable oil
  • 3 cups grated carrots
  • 1 cup crushed pineapple drained
  • 1 cup chopped walnuts or pecans optional
  • 1 teaspoon vanilla extract

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.
  3. In another bowl, beat the eggs and mix in the oil, grated carrots, crushed pineapple, vanilla, and nuts (if using).
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly between the prepared cake pans.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Serving
  1. Frost with cream cheese frosting if desired and enjoy.

Notes

For best flavor, use fresh, finely grated carrots and ensure the crushed pineapple is well-drained. You can experiment with spices like nutmeg or add coconut for variations.
