  • 2 cups macaroni
  • 2 cups shredded cheese (cheddar, mozzarella, or a mix) Freshly shredded cheese melts better.
  • 1 cup milk For lactose-free, use dairy alternatives.
  • 2 large eggs
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped bell peppers
  • 1/4 cup chopped green onions
  • 1 teaspoon mustard
  • 1 teaspoon Caribbean seasoning Or a mix of paprika, cayenne, and allspice.
  • Salt and pepper to taste
  • Butter for greasing the baking dish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the macaroni according to package instructions, drain, and set aside.
  3. In a large mixing bowl, whisk together the milk and eggs.
  4. Add the cooked macaroni, shredded cheese, onions, bell peppers, green onions, mustard, and Caribbean seasoning to the bowl. Mix well.
  5. Season with salt and pepper to taste.
  6. Grease a baking dish with butter and pour the macaroni mixture into it.
  7. Bake in the preheated oven for about 30-35 minutes, or until the top is golden and bubbly.
  8. Allow to cool slightly before serving.

Notes

Serve warm with a crisp salad or steamed vegetables. It can also be frozen before baking for up to 2 months. For a shortcut, use pre-shredded cheese; freshly shredded cheese provides a creamier texture.
