Cooking the Onions
- In a large skillet, heat the olive oil and butter over medium heat.
- Add the halved and thinly sliced onions.
- Sprinkle with ½ tsp of kosher salt.
- Cook the onions, stirring occasionally, for about 10 minutes until they start to soften.
- Reduce the heat to low, cover the skillet, and cook for another 15-20 minutes, stirring occasionally.
- Add the remaining ½ tsp of salt and continue to cook uncovered, stirring more frequently until the onions are deep golden brown and caramelized, about 25-30 minutes.
- Once done, remove from heat and use as desired.
Notes
Caramelized onions can be stored in the refrigerator for up to 5 days. To extend their shelf life, freeze them in a freezer-safe container for up to 3 months. Reheat directly from frozen or thaw overnight in the refrigerator.
