  • 2 large large yellow onions, halved and thinly sliced Use yellow onions for the best flavor.
  • 2 tbsp unsalted butter Unsalted butter is recommended for better control of salt.
  • 1 tbsp olive oil
  • 1 tsp kosher salt Divided into two parts for cooking.

Method
 

Cooking the Onions
  1. In a large skillet, heat the olive oil and butter over medium heat.
  2. Add the halved and thinly sliced onions.
  3. Sprinkle with ½ tsp of kosher salt.
  4. Cook the onions, stirring occasionally, for about 10 minutes until they start to soften.
  5. Reduce the heat to low, cover the skillet, and cook for another 15-20 minutes, stirring occasionally.
  6. Add the remaining ½ tsp of salt and continue to cook uncovered, stirring more frequently until the onions are deep golden brown and caramelized, about 25-30 minutes.
  7. Once done, remove from heat and use as desired.

Notes

Caramelized onions can be stored in the refrigerator for up to 5 days. To extend their shelf life, freeze them in a freezer-safe container for up to 3 months. Reheat directly from frozen or thaw overnight in the refrigerator.
