Ingredients
  

For the Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cups sugar
  • 0.5 cups unsalted butter, melted
For the Cheesecake Filling
  • 16 ounces cream cheese, softened 2 packages
  • 1 cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups apples, peeled and diced
  • 1 teaspoon cinnamon
  • 1 cup caramel sauce for topping

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a bowl, mix together graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish.
Making the Cheesecake
  1. In a mixing bowl, beat cream cheese and sugar until smooth.
  2. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. Fold in diced apples and cinnamon. Pour the cheesecake mixture over the crust.
  4. Drizzle caramel sauce on top.
Baking
  1. Bake for 30-35 minutes or until the center is set.
  2. Allow to cool and refrigerate for at least 2 hours before cutting into bars.
Serving
  1. Serve chilled, drizzled with more caramel sauce if desired.

Notes

Store in an airtight container in the refrigerator for up to 5 days. They can be frozen for about 2 months. Thaw in the fridge overnight before serving.
