Preparation
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a bowl, mix together graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish.
Making the Cheesecake
- In a mixing bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Fold in diced apples and cinnamon. Pour the cheesecake mixture over the crust.
- Drizzle caramel sauce on top.
Baking
- Bake for 30-35 minutes or until the center is set.
- Allow to cool and refrigerate for at least 2 hours before cutting into bars.
Serving
- Serve chilled, drizzled with more caramel sauce if desired.
Notes
Store in an airtight container in the refrigerator for up to 5 days. They can be frozen for about 2 months. Thaw in the fridge overnight before serving.
