Preparation
- Preheat the oven to 425°F (220°C).
- In a bowl, toss the sweet potato slices with olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
Cooking
- Bake the sweet potatoes for about 25-30 minutes, flipping halfway, until they are crispy.
- While the chips are baking, season the fish fillets with Cajun seasoning on both sides.
- Heat a skillet over medium heat and add olive oil. Cook the fish for about 3-4 minutes on each side until cooked through and golden.
Serving
- Serve the spicy fish with the sweet potato chips and a wedge of lemon if desired.
Notes
Store leftovers separately in airtight containers; fish lasts 2 days, chips are best within 1-2 days. Reheat fish in a skillet for best results.
