Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Pat the Cornish hens dry with paper towels.
  3. Brush the hens with olive oil.
  4. Rub the Cajun seasoning all over the hens and season with salt and pepper.
  5. Place the hens in a roasting pan, breast side up.
Cooking
  1. Roast in the preheated oven for 45-60 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
  2. Let the hens rest for 10 minutes before carving.
