Main ingredients
  • 8 oz penne pasta
  • 1 lb chicken breast, sliced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 bell pepper, sliced bell pepper
  • 1 onion, chopped onion
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Cooking the Pasta
  1. Cook the penne pasta according to package instructions. Drain and set aside.
Preparing the Chicken
  1. Season the sliced chicken with Cajun seasoning.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Sautéing the Vegetables
  1. In the same skillet, add bell pepper, onion, and garlic. Sauté until vegetables are tender.
Combining the Ingredients
  1. Stir in heavy cream and bring to a simmer.
  2. Add the cooked pasta, chicken, and Parmesan cheese. Stir until well combined. Season with salt and pepper to taste.
Serving
  1. Serve warm, garnished with fresh parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over low heat, adding a splash of cream or broth. Freezing is also possible in a freezer-safe container for up to 2 months.
