Preparation
- In a bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until frothy.
- In a large mixing bowl, combine flour and salt.
- Pour the yeast mixture into the flour mixture and stir until a dough forms.

- Place the dough in a greased bowl and cover, letting it rise for 1 hour.
Boiling and Baking
- Preheat the oven to 450°F (232°C).
- In a large pot, bring water to a boil and add baking soda.
- Divide the dough into small pieces, shape into bites, and boil each for 30 seconds.
- Place the bites on a baking sheet lined with parchment paper, brush with beaten egg, and sprinkle with sea salt.
- Bake for 12-15 minutes until golden brown.
- Brush with melted butter before serving.
Notes
To keep pretzel bites fresh, store in an airtight container at room temperature for up to 3 days. Freeze for up to 3 months. Reheat in the oven at 350°F (175°C) until warmed through. Experiment with spices for added flavor.
