  • 1 packet active dry yeast Ensure freshness
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour Can substitute with whole wheat for denser bites
  • 1 teaspoon salt
Boiling and Topping Ingredients
  • 0.5 cups baking soda
  • 1 large egg, beaten For brushing
  • Coarse to taste sea salt For sprinkling
  • Butter to taste melted For brushing before serving

Method
 

Preparation
  1. In a bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt.
  3. Pour the yeast mixture into the flour mixture and stir until a dough forms.
  4. Knead the dough on a floured surface for about 5 minutes until smooth.
  5. Place the dough in a greased bowl and cover, letting it rise for 1 hour.
Boiling and Baking
  1. Preheat the oven to 450°F (232°C).
  2. In a large pot, bring water to a boil and add baking soda.
  3. Divide the dough into small pieces, shape into bites, and boil each for 30 seconds.
  4. Place the bites on a baking sheet lined with parchment paper, brush with beaten egg, and sprinkle with sea salt.
  5. Bake for 12-15 minutes until golden brown.
  6. Brush with melted butter before serving.

Notes

To keep pretzel bites fresh, store in an airtight container at room temperature for up to 3 days. Freeze for up to 3 months. Reheat in the oven at 350°F (175°C) until warmed through. Experiment with spices for added flavor.
