Preparation
- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while it preheats.
- In a small bowl, toss the shredded chicken with 1/4 cup of the buffalo sauce until every piece is well-coated.
- Stretch your pizza dough on a lightly floured surface or a piece of parchment paper until it reaches a 12-inch circle. If the dough snaps back, let it rest for five minutes and try again.
Cooking
- Spread a thin layer of buffalo sauce or a mix of buffalo sauce and ranch dressing over the dough, leaving a 1-inch border for the crust.
- Sprinkle half of the mozzarella cheese over the sauce.
- Evenly distribute the buffalo chicken and red onions over the cheese.
- Top with the remaining mozzarella and the crumbled blue cheese.
- Carefully transfer the pizza to the oven and bake for 12 to 15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.
Plating
- Remove the pizza from the oven and let it sit for two minutes to allow the cheese to set.
- Drizzle additional buffalo sauce and ranch dressing across the top in a zigzag pattern.
- Garnish with fresh cilantro or chopped green onions.
- Slice into wedges and serve immediately while the crust is still crispy and the cheese is molten.
Notes
For best results, ensure your oven is fully preheated. Use rotisserie chicken for convenience. Avoid over-saucing to prevent sogginess. Pre-baking the dough can help with crispness.
