Cheese Mixture
  • 8 oz feta cheese, crumbled Can substitute with goat cheese or ricotta.
  • ½ block cream cheese, softened (4 oz) Ensure it's softened for easy blending.

  • 1 tablespoon lemon juice, freshly squeezed Adds freshness to the cheese mix.
  • 1 tablespoon olive oil Helps achieve smooth texture.

Method
 

Preparing the Bruschetta
  1. Wash and dice the Roma tomatoes into small cubes and place them in a mixing bowl.
  2. Add the chopped basil and the minced garlic to the tomatoes.
  3. Drizzle in the extra virgin olive oil and balsamic vinegar. Add salt to taste and gently mix everything together. Allow to sit for about 10-15 minutes.
Preparing the Cheese Mixture
  1. In a separate bowl, blend the softened cream cheese, crumbled feta cheese, and sour cream until creamy.
  2. Stir in the freshly squeezed lemon juice and olive oil. Mix until smooth and season with a pinch of salt.
Assembling the Dip
  1. In a serving dish, spread the creamy cheese mixture evenly.
  2. Top with the prepared bruschetta mixture.
  3. Garnish with additional basil leaves, red pepper flakes, and grated Parmesan cheese. Serve immediately.

Notes

For best flavor, chill before serving for at least 30 minutes. Store leftovers in an airtight container in the refrigerator for up to 3 days. Avoid freezing.
