Ingredients
  

For the Chicken and Pasta
  • 2 pieces boneless, skinless chicken breasts, sliced into strips
  • 200 g pasta (penne or spaghetti) Works best with penne or spaghetti.
  • 2 tablespoons olive oil For cooking the chicken.
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 teaspoon Italian seasoning
For the Bruschetta Topping
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
Optional Toppings
  • Grated Parmesan cheese For serving.
  • Extra basil for garnish

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Cooking the Chicken
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Season the sliced chicken breasts with salt, pepper, and Italian seasoning.
  3. Add the chicken to the skillet and cook for about 5-7 minutes, or until golden brown and cooked through. Stir occasionally to ensure even cooking.
Making the Bruschetta Topping
  1. While the chicken is cooking, in a bowl, combine the halved cherry tomatoes, chopped basil, balsamic vinegar, olive oil, salt, and pepper. Mix well and set aside to let the flavors meld.
Combining and Serving
  1. Once the chicken is cooked, reduce the heat to low and add the drained pasta to the skillet. Toss to combine, allowing the chicken and pasta to absorb the flavors.
  2. Top the chicken and pasta with the bruschetta mixture. Toss gently to incorporate.
  3. Serve immediately, garnished with grated Parmesan cheese and extra fresh basil if desired.
