  • 1 whole rotisserie chicken, shredded Using leftover chicken is a great option.
  • 2 cups cooked rice Can substitute with brown rice if pre-cooked.
  • 2 cups fresh broccoli florets
  • 1 can cream of chicken soup Can substitute with cream of mushroom soup.
  • 1 cup sour cream
  • 1 cup shredded cheese Cheddar or other cheese of your preference.
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper Adjust according to preference.
Topping Ingredients
  • 1 cup breadcrumbs For topping.
  • 1 tablespoon melted butter For mixing with breadcrumbs.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine shredded rotisserie chicken, cooked rice, broccoli florets, cream of chicken soup, sour cream, shredded cheese, chicken broth, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Transfer the mixture to a greased baking dish.
  4. In a separate bowl, mix breadcrumbs with melted butter and sprinkle over the top of the casserole.
Cooking
  1. Bake for 25-30 minutes or until the casserole is bubbly and the top is golden brown.
  2. Let cool for a few minutes before serving.

Notes

This casserole can be made ahead of time and stored in the refrigerator for up to 24 hours before baking. Feel free to customize with additional vegetables or different cheeses based on your preferences.
