  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Method
 

Preparation
  1. In a large pot, melt butter over medium heat. Add onion and garlic, and sauté until translucent.
  2. Add broccoli and vegetable broth, and bring to a boil.
  3. Reduce heat and simmer until broccoli is tender, about 10 minutes.
  4. Stir in cottage cheese and milk, then blend the mixture until smooth.
  5. Return to heat, add cheddar cheese, stirring until melted.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes

Garnish with extra cheddar or freshly cracked black pepper. Pair with crusty bread for a hearty meal. Store leftovers in an airtight container for up to 3 days.
