Ingredients
  

For the Blueberry Filling
  • 4 cups blueberries Fresh or frozen blueberries work well.
  • 2 tablespoons flour For coating the blueberries.
  • 2 tablespoons sugar Granulated sugar for the filling.
For the Crisp Topping
  • 1 cup sifted flour
  • ½ cup butter Softened butter.
  • 1 cup sugar Granulated sugar for the topping.
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder

Method
 

Preparation
  1. Preheat your oven to 375 degrees Fahrenheit.
  2. In a large bowl, place the blueberries and sprinkle 2 tablespoons of flour and 2 tablespoons of sugar over them. Toss the blueberries gently to coat them evenly.
  3. Transfer the coated blueberries into a buttered 8" by 8" baking dish.
Making the Crisp Topping
  1. In a separate bowl, cream together the flour, butter, sugar, salt, and baking powder using a pastry blender until the mixture resembles coarse crumbs.
  2. Stir the vanilla extract into the mixture.
  3. Evenly sprinkle the crumbled topping over the blueberry mixture.
Baking
  1. Place the baking dish in the preheated oven and bake for 45 to 55 minutes until the topping is golden brown.
  2. After baking, transfer the crisp to a wire rack to cool for about 30 minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. Can also be served for breakfast with Greek yogurt and granola. Store leftovers in an airtight container in the fridge for up to 3 days.
