  • 1/2 teaspoon cinnamon Can add nutmeg for variation.
  • 1/4 cup oat flour Can substitute with all-purpose or almond flour.
  • 1/4 teaspoon baking powder
  • 1/2 cup fresh or frozen blueberries Gently fold in to avoid crushing.
  • Pinch salt Enhances flavors.
  • Butter or oil, for greasing For non-stick baking.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a small baking dish with butter or oil.
  2. In a mixing bowl, whisk together the cottage cheese, eggs, maple syrup (or honey), vanilla extract, and cinnamon until the mixture is smooth.
  3. Add in the oat flour, baking powder, and a pinch of salt, stirring until everything is fully combined.
  4. Gently fold in the blueberries to the mixture, being careful not to crush them.
  5. Pour the prepared mixture into the greased baking dish and spread it out evenly.
Baking
  1. Bake in the preheated oven for 30–35 minutes or until the center is set and the top has turned golden.
  2. Allow the bake to cool slightly before serving. Enjoy it warm or chilled.

Notes

Store leftovers in the fridge for up to 3 days. Reheat in the oven or microwave. Customize with nuts, different fruits, or make it vegan with flax eggs.
