Preparation
- Preheat your oven to 350°F (175°C) and lightly grease a small baking dish with butter or oil.
- In a mixing bowl, whisk together the cottage cheese, eggs, maple syrup (or honey), vanilla extract, and cinnamon until the mixture is smooth.
- Add in the oat flour, baking powder, and a pinch of salt, stirring until everything is fully combined.
- Gently fold in the blueberries to the mixture, being careful not to crush them.
- Pour the prepared mixture into the greased baking dish and spread it out evenly.
Baking
- Bake in the preheated oven for 30–35 minutes or until the center is set and the top has turned golden.
- Allow the bake to cool slightly before serving. Enjoy it warm or chilled.
Notes
Store leftovers in the fridge for up to 3 days. Reheat in the oven or microwave. Customize with nuts, different fruits, or make it vegan with flax eggs.
