Preparation
- Preheat your oven to 350°F (175°C) and generously grease a 9×9-inch baking dish with cooking spray or butter.
- In a large mixing bowl, whisk together the cottage cheese, eggs, honey or maple syrup, vanilla extract, cinnamon, and salt until completely smooth.
- Stir in the oats and almond milk, mixing until everything is well combined. Let the mixture sit for 5 minutes.
Baking
- Gently fold in the blueberries, chopped nuts (if using), and chia seeds (if using), being careful not to burst the berries. Ensure they are evenly distributed throughout the mixture.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let cool for 5-10 minutes before slicing and serving warm.
