  • 1/2 cup blueberries (fresh or frozen)
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mix the cottage cheese, oats, blueberries, honey (or maple syrup), eggs, milk, vanilla extract, baking powder, cinnamon, and salt until combined.
  3. Pour the mixture into the greased baking dish.
Baking
  1. Bake in the preheated oven for 30-35 minutes or until the top is golden and set.
  2. Allow to cool slightly before serving. Enjoy it warm!

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze portions wrapped tightly for up to 3 months. Thaw in the fridge before reheating.
