Ingredients
  

For the Custard Base
  • 1 cup milk Use whole or 2% milk for best flavor.
  • 3 large eggs Room temperature eggs work best.
  • 1/2 cup sugar Adjust based on sweetness preference.
  • 1 teaspoon vanilla extract Pure vanilla extract recommended.
  • 1/2 cup all-purpose flour Can substitute with coconut flour for gluten-free.
  • 1/4 teaspoon salt Enhances the flavor of the custard.
For the Topping
  • 1 cup blueberries Fresh or thawed frozen berries.
  • 1 cup cherries, pitted and halved Use fresh or frozen cherries.
  • 1 tablespoon butter For greasing the baking dish.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a pie dish or baking dish with butter.
  2. In a mixing bowl, whisk together the milk, eggs, sugar, and vanilla extract until smooth.
  3. Gradually add in the flour and salt, whisking until combined.
Assembly
  1. Pour half of the batter into the prepared dish.
  2. Scatter the blueberries and cherries evenly over the batter.
  3. Pour the remaining batter over the fruit.
Baking
  1. Bake for 35-40 minutes, or until the clafoutis is set and golden brown on top.
  2. Allow to cool slightly before serving, and enjoy warm or at room temperature.

Notes

Serve with whipped cream or ice cream for extra indulgence. Store leftovers in the refrigerator for up to 3 days.
