Ingredients
  

Meat
  • 1 lb ground beef (80/20 blend) Provides rich flavor.
  • 12 oz beef smoked sausage, sliced into rounds Adds a smoky flavor.
Vegetables
  • 3 large russet potatoes, washed and cut into 1/2-inch cubes For a crispy texture.
  • 1 large yellow onion, diced Adds sweetness.
  • 1 medium green bell pepper, diced For color and flavor.
  • 1 cup sweet corn (fresh, canned, or frozen) Adds sweetness and texture.
Cooking Essentials
  • 3 tablespoons vegetable oil or melted beef tallow For cooking.
  • 1 teaspoon salt To taste.
  • 1 teaspoon black pepper To taste.
  • 1 teaspoon garlic powder For flavor.
  • 1 teaspoon smoked paprika For added smokiness.
  • 1/2 teaspoon onion powder Enhances onion flavor.
Garnish
  • to taste Fresh parsley Optional, for garnish.

Method
 

Preparation
  1. Preheat your Blackstone griddle to medium-high heat.
  2. Spread 2 tablespoons of oil over one side of the griddle.
  3. Place the cubed potatoes onto the hot oil and cover them with a griddle dome if available.
Cooking
  1. Cook the potatoes until golden brown and tender, about 10-12 minutes, flipping occasionally.
  2. Add the remaining tablespoon of oil to the other side of the griddle and place the ground beef and sliced beef sausage on the surface.
  3. Break the ground beef into small chunks and cook until fully browned and the sausage has a nice sear.
  4. Add the diced onion, bell pepper, and corn to the meat mixture. Sauté for 3-5 minutes until onions are translucent and peppers soften.
  5. Slide the cooked potatoes over to the meat and vegetable mixture and toss everything together.
  6. Sprinkle the salt, pepper, garlic powder, smoked paprika, and onion powder over the mixture.
  7. Continue to toss for another 2-3 minutes so the flavors meld together.
  8. Check that the beef is cooked through and the potatoes are crispy, then remove from the griddle.
  9. Garnish with fresh parsley if desired and serve immediately.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to a month. Reheat in the griddle or microwave.
