Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened Make sure your butter is softened, not melted.
  • 1 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda Use fresh for optimal rising.
  • 1/2 teaspoon cream of tartar Can be replaced with extra baking soda.
  • 1/4 teaspoon salt
  • 1/3 cup sprinkles Optional, choose different colors for themes.

Method
 

Preparation
  1. In a large bowl, beat softened butter with powdered sugar until light and fluffy, about 2-3 minutes.
  2. Add egg and vanilla extract, and beat until well combined.
  3. In another bowl, whisk together flour, baking soda, cream of tartar, and salt.
  4. Gradually mix the dry ingredients into the butter mixture, just until combined.
  5. Gently fold in sprinkles if using.
  6. Cover the dough and refrigerate for at least 30 minutes.
Baking
  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Scoop 1-tablespoon portions of dough, roll into balls, and optionally coat with more powdered sugar.
  3. Place balls 2 inches apart on baking sheets and bake for 9-11 minutes.
  4. Let cool on the sheet for 5 minutes before transferring to a wire rack.

Notes

To keep cookies fresh, store in an airtight container at room temperature for up to a week or freeze for up to three months. Chilling dough helps cookies hold their shape better.
