  • 1 whole lemon, zested and juiced
  • 2 tablespoons olive oil

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix the minced garlic, lemon zest, lemon juice, olive oil, and chopped herbs. Add salt and pepper to taste.
  3. Rub the mixture under the skin of the Cornish hens and on the outside, ensuring the flavor penetrates deeply.
Cooking
  1. Place the hens in a roasting pan and roast for about 50-60 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown and crispy.
  2. Let the hens rest for 10 minutes before serving, which will help keep the meat juicy.
