  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup pepperoni, sliced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup Italian dressing
  • to taste Salt and pepper
  • Fresh basil for garnish

Method
 

Preparation
  1. Cook the cheese tortellini according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, black olives, pepperoni, and red onion.
  3. Pour the Italian dressing over the salad and toss to combine.
  4. Season with salt and pepper to taste.
  5. Garnish with fresh basil before serving.
  6. Chill in the refrigerator for at least 30 minutes before serving for best flavor.

Notes

Store in an airtight container in the refrigerator for up to three days. Add the dressing just before serving to maintain vegetable crispness.
