Preparation
  1. Butter one side of each slice of sourdough bread.
  2. Heat a skillet over medium heat.
Cooking
  1. Place one slice of bread, buttered side down, in the skillet.
  2. Layer the cheddar and mozzarella cheese on top of the bread.
  3. Place the second slice of bread on top, buttered side up.
  4. Grill for 2-3 minutes until golden brown, then flip and grill the other side until golden and the cheese is melted.
  5. Remove from heat, slice, and serve warm.

Notes

Pairs well with tomato soup or fresh salad. For leftovers, wrap tightly and store in the refrigerator for up to 2 days. Reheat in a skillet for best results.
