Method
Cooking Pasta
- Bring a large pot of salted water to a boil and cook the pasta until al dente.
- Reserve 1 cup of the pasta water, then drain the pasta.
Making the Sauce
- In a large skillet over medium heat, melt the butter and add the garlic; sauté for 1–2 minutes until fragrant.
- Add the cream cheese (cut into chunks) to the skillet and stir frequently until it begins to melt and blend with the butter and garlic.
- Pour in the milk slowly, stirring constantly to create a smooth sauce.
- Add Parmesan cheese and stir until fully melted.
- Gradually add reserved pasta water to loosen the sauce to your desired consistency.
Combining Pasta and Sauce
- Add the drained pasta directly into the sauce and toss until evenly coated.
- Season with salt and pepper. Garnish with parsley and more Parmesan before serving.
Notes
Store any leftover pasta in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of milk or reserved pasta water to loosen the sauce.
