Preparation
- Preheat your oven to 400°F (200°C). Grease an 8-inch square baking pan.
- In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, vegetable oil, and eggs.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Pour the batter into the prepared baking pan.
- Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let cool for a few minutes and serve warm.
Notes
Serve warm with butter, or with soups, stews, or barbecue. Can be stored in an airtight container at room temperature for up to 3 days, refrigerated for up to a week, or frozen for up to 3 months.
