Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg. Set aside.
- In a large bowl, whisk together oil, eggs, sugar, vanilla extract, and pumpkin puree until well combined.
Mixing
- Fold in 1 cup of chocolate chips into the wet ingredients.
- Gradually mix in the dry ingredients until just blended. Scrape the bowl to ensure thorough mixing.
- Grease an 8" x 4" x 3" loaf pan with oil spray.
- Pour the batter into the loaf pan and sprinkle the remaining 1/4 cup of chocolate chips on top.
Baking
- Bake in the preheated oven for 50-60 minutes.
- Check for doneness by inserting a toothpick; if it comes out clean, the bread is ready.
Cooling
- Allow the bread to cool at room temperature for about 45 minutes before removing it from the pan.
Notes
Serve warm with cream cheese or butter. Enjoy with coffee or tea. Store in an airtight container for up to 3 days, or freeze for up to 3 months.
