Preparation
- Start by preparing your base and fresh ingredients. If you do not have pre-cooked rice, begin boiling your rice according to package instructions.
- While the rice cooks, wash and chop the cherry tomatoes, cilantro, and avocado.
- Rinse the black beans thoroughly in a colander to remove excess salt and starch.
- Set all the fresh toppings aside in small bowls to make the final assembly quick and organized.
Cooking
- Place a large skillet over medium-high heat. Add the ground beef and cook until it is completely browned, breaking it into small crumbles with a wooden spoon or spatula.
- Drain any excess fat from the pan. Lower the heat to medium and stir in the taco seasoning and 1/4 cup of water.
- Simmer the beef for 3 to 5 minutes until the sauce thickens and coats the meat evenly.
- In the last minute of cooking, toss in the corn and black beans just to warm them through.
Plating
- Divide the cooked rice evenly among four deep bowls.
- Squeeze a fresh lime wedge over the rice and sprinkle with a little cilantro for extra flavor.
- Top the rice with a generous scoop of the seasoned beef mixture.
- Arrange the tomatoes, avocado slices, and corn side-by-side on top of the beef.
- Garnish with shredded cheese, a dollop of sour cream, and your favorite salsa.
- Serve immediately while the beef is hot and the vegetables are crisp.
Notes
For meal prepping, keep cold ingredients separate from the beef and rice to maintain freshness. Customize the bowl with different proteins or toppings as desired.
