Preparation
- Partially freeze the beef for 15 minutes before slicing to make it easier.
- Slice the beef as thin as possible against the grain for maximum tenderness.
- Cut the broccoli into small, uniform florets.
- Mince the garlic and fresh ginger.
- Boil the ramen noodles according to package directions until just tender, about 3 minutes. Drain and set aside without rinsing.
Cooking
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add the beef in a single layer and sear without moving for 1-2 minutes.
- Toss the beef and cook for another minute until browned but still juicy. Remove the beef to a plate.
- Add the remaining 1 tablespoon of oil to the same pan. Toss in the broccoli florets, garlic, and ginger. Stir-fry for about 4 minutes until the broccoli turns vibrant green and is crisp-tender.
- Return the beef and cooked noodles to the pan with the broccoli. Pour in the soy sauce, brown sugar, and sesame oil. Toss everything together vigorously for 2-3 minutes.
- Taste and adjust seasoning if needed. Top with green onions and sesame seeds and serve immediately.
Notes
Serve hot with a side salad or steamed dumplings. For spiciness, drizzle chili oil over before serving.
