Preparation
- Preheat your oven to 475°F (245°C) and place a pizza stone in the oven if you have one.
- Lightly dust a baking sheet or pizza peel with cornmeal to prevent sticking.
- Roll out your pizza dough on a lightly floured surface into a 12-inch circle or rectangle.
- Brush the edges of the dough with olive oil to ensure a golden, crispy crust.
Layering the Toppings
- Spread the BBQ sauce evenly over the dough, leaving a 1-inch border around the edges.
- Sprinkle half of the mozzarella and all of the smoked gouda over the sauce.
- Evenly distribute the cooked chicken and red onion slices across the cheese.
- Top with the remaining mozzarella to lock the toppings in place during baking.
Baking and Plating
- Transfer the pizza to the oven and bake for 12 to 15 minutes, or until the crust is golden brown and the cheese is bubbly.
- Remove the pizza and let it rest for 2 to 3 minutes.
- Garnish with fresh chopped cilantro and an extra drizzle of BBQ sauce, then slice and serve immediately.
Notes
For best results, use a combination of mozzarella and smoked gouda. If using cold chicken, toss with BBQ sauce before adding to the pizza.
