Ingredients
  

Pizza crust and sauce
  • 1 pound store-bought or homemade pizza dough
  • 1/2 cup high-quality smoky BBQ sauce (plus extra for drizzling) Choose a thick, hickory-flavored BBQ sauce for best results
  • 1/2 teaspoon cornmeal (for the baking sheet) To prevent sticking
Cheese
  • 2 cups shredded mozzarella cheese Use a mix of mozzarella and smoked gouda for enhanced flavor
  • 1/2 cup smoked gouda cheese, shredded (optional for extra depth)
Toppings
  • 1.5 cups cooked chicken breast, shredded or cubed Rotisserie chicken can be used for convenience
  • 1/4 small red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped Add at the end for flavor
  • 1 tablespoon olive oil Brush edges of the dough for a crispy crust

Method
 

Preparation
  1. Preheat your oven to 475°F (245°C) and place a pizza stone in the oven if you have one.
  2. Lightly dust a baking sheet or pizza peel with cornmeal to prevent sticking.
  3. Roll out your pizza dough on a lightly floured surface into a 12-inch circle or rectangle.
  4. Brush the edges of the dough with olive oil to ensure a golden, crispy crust.
Layering the Toppings
  1. Spread the BBQ sauce evenly over the dough, leaving a 1-inch border around the edges.
  2. Sprinkle half of the mozzarella and all of the smoked gouda over the sauce.
  3. Evenly distribute the cooked chicken and red onion slices across the cheese.
  4. Top with the remaining mozzarella to lock the toppings in place during baking.
Baking and Plating
  1. Transfer the pizza to the oven and bake for 12 to 15 minutes, or until the crust is golden brown and the cheese is bubbly.
  2. Remove the pizza and let it rest for 2 to 3 minutes.
  3. Garnish with fresh chopped cilantro and an extra drizzle of BBQ sauce, then slice and serve immediately.

Notes

For best results, use a combination of mozzarella and smoked gouda. If using cold chicken, toss with BBQ sauce before adding to the pizza.
