  • 8 oz pasta Use a short pasta shape like rotini or penne
  • 1 cup grilled chicken, diced Leftover grilled chicken works well
  • 1 can black beans, rinsed and drained Adds texture and nutritional value
  • 1 cup shredded cheese (cheddar or your choice) Adds creaminess and flavor
  • 1/2 cup creamy dressing (ranch or creamy BBQ) You can use a mixture of yogurt and mayonnaise as an alternative
  • 1/4 cup chopped green onions For garnish and flavor
  • to taste Salt and pepper Season to preference

Method
 

Preparation
  1. Cook the pasta according to package instructions; drain and let cool.
  2. In a large bowl, combine the cooled pasta, grilled chicken, black beans, cheese, and green onions.
  3. Add creamy dressing and mix well until all ingredients are coated.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve as a side dish for grilled meats or as a light lunch. Storing in an airtight container in the refrigerator lasts 3-4 days. Add more dressing before serving if the pasta absorbs too much.
