- In a large bowl, combine the black beans, corn, bell pepper, cherry tomatoes, red onion, and avocado.
- In a small bowl, mix together the Greek yogurt and ranch dressing mix until smooth.
- Add the sliced grilled chicken to the bean and veggie mixture, then pour the dressing over the top.
- Gently toss everything together until well combined.
- Season with salt and pepper to taste.
- Serve with lime wedges on the side.
Notes
Serve chilled or at room temperature. Great for gatherings and pairs well with cheese quesadillas or grilled vegetables. Leftovers can be stored in an airtight container for up to 3 days.
