Method
Preparing the Chicken Crust
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the shredded chicken, mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well incorporated.
- Line a baking sheet with parchment paper. Transfer the mixture onto the parchment and shape it into a pizza crust, about 1/4 inch thick.
- Place the crust in the preheated oven and bake for about 15 minutes, or until the edges begin to turn golden brown.
Topping and Baking
- Once the crust is done, remove it from the oven. Smooth the BBQ sauce over the crust, leaving a small border for the crust edge.
- Sprinkle the remaining mozzarella cheese evenly over the sauce, followed by the diced red onion and sliced jalapeños.
- Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is fully melted and bubbly.
- After baking, let the pizza cool for a few minutes. Garnish with freshly chopped cilantro if desired.
