Ingredients
  

For the Chicken Crust
  • 2 cups shredded cooked chicken Rotisserie works great
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
For the Toppings
  • 1/2 cup BBQ sauce Sugar-free if desired
  • 1 cup shredded mozzarella cheese For topping
  • 1 cup diced red onion
  • 1/2 cup sliced jalapeños Optional for extra spice
  • Fresh cilantro For garnish (optional)

Method
 

Preparing the Chicken Crust
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the shredded chicken, mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well incorporated.
  3. Line a baking sheet with parchment paper. Transfer the mixture onto the parchment and shape it into a pizza crust, about 1/4 inch thick.
  4. Place the crust in the preheated oven and bake for about 15 minutes, or until the edges begin to turn golden brown.
Topping and Baking
  1. Once the crust is done, remove it from the oven. Smooth the BBQ sauce over the crust, leaving a small border for the crust edge.
  2. Sprinkle the remaining mozzarella cheese evenly over the sauce, followed by the diced red onion and sliced jalapeños.
  3. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is fully melted and bubbly.
  4. After baking, let the pizza cool for a few minutes. Garnish with freshly chopped cilantro if desired.
