Comforting and flavorful, these Barbecue Meatball Bowls combine juicy meatballs with roasted sweet potatoes and broccoli, drizzled with a creamy avocado sauce for a delicious and healthy meal.

Ingredients
  

For the Meatballs
  • 1 pound ground sirloin or lean beef Can substitute with ground turkey or chicken.
  • 1 tablespoon Dijon mustard
  • 1 tablespoon alcohol-free Worcestershire sauce
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1/3 cup Panko breadcrumbs Can substitute with regular breadcrumbs.
  • 1 tablespoon dried basil
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 1 large garlic clove, minced
  • 2/3 cup barbecue sauce Ensure it has no alcohol ingredients.
For Roasting
  • 4 medium sweet potatoes, cubed
  • 1 bunch broccoli, cut into florets
  • 4 tablespoons extra-virgin olive oil
For the Avocado Sauce
  • 1 ripe avocado
  • 1/2 cup Greek yogurt Can substitute with sour cream.
  • 2 tablespoons lime juice
  • 1/4 cup fresh cilantro or parsley
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon tamari

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine beef, Dijon mustard, Worcestershire sauce, sea salt, black pepper, egg, Panko breadcrumbs, dried basil, smoked paprika, dried oregano, and minced garlic. Mix until well combined.
  3. Form the mixture into small, bite-sized meatballs and place them on one side of the prepared baking sheet.
  4. On the other side of the baking sheet, toss the sweet potato cubes and broccoli florets with 3 tablespoons of olive oil, salt, and pepper.
Cooking
  1. Roast everything in the oven for 20 minutes.
  2. While the meatballs and veggies roast, whisk together the barbecue sauce, balsamic vinegar, and tamari in a small bowl.
  3. Remove the tray from the oven, brush the meatballs generously with the barbecue mixture, and return to the oven for another 10-15 minutes until the meatballs are cooked through and the vegetables are tender.
Making the Sauce
  1. To make the sauce, blend the avocado, Greek yogurt, lime juice, remaining tablespoon of olive oil, and fresh herbs in a food processor until smooth.
Assembly
  1. Assemble the bowls by dividing the roasted sweet potatoes, broccoli, and meatballs into serving bowls, then drizzle generously with the Avocado Goddess Sauce.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. The creamy avocado sauce is best made fresh but can be stored in the fridge for up to two days.
