Ingredients
  

Muffin Batter
  • 2 pieces ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 piece egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour
Cinnamon Sugar Topping
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, combine the mashed bananas with melted butter.
  3. Stir in sugar, beaten egg, and vanilla until well combined.
  4. Mix in baking soda and salt.
  5. Gradually add the all-purpose flour, mixing until just combined.
  6. For the crumble topping, combine brown sugar and cinnamon in a small bowl.
Baking
  1. Fill each muffin cup with batter and sprinkle the cinnamon sugar mixture on top.
  2. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  3. Allow to cool slightly before enjoying.

Notes

Serve warm with butter or cream cheese. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
