Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a mixing bowl, combine the mashed bananas with melted butter.
- Stir in sugar, beaten egg, and vanilla until well combined.
- Mix in baking soda and salt.
- Gradually add the all-purpose flour, mixing until just combined.
- For the crumble topping, combine brown sugar and cinnamon in a small bowl.
Baking
- Fill each muffin cup with batter and sprinkle the cinnamon sugar mixture on top.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow to cool slightly before enjoying.
Notes
Serve warm with butter or cream cheese. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
